Sticky Beef Short Ribs

Ingredients

  • 2 racks of beef short ribs
  • 1 tbsp black pepper
  • 1 tbsp sea salt
  • 1/2 red onion (chopped finely)
  • 3/4 cup tomato sauce
  • 1/2 cup bourbon
  • 3 tbsps brown sugar
  • 3 tbsps apple cider vinegar
  • 2 tbsps Worchester sauce
  • 1 tbsp soy sauce
  • 1 tbsp Dijon mustard
  • 1 tbsp good quality cooking oil

Method

Cut membrane and silver skin off the top of the ribs. Gently massage the salt and pepper into the ribs. If you wish to smoke the ribs, prepare your smoker as per instructions.

Place a metal pan half full of water underneath the middle burner. Preheat the BBQ for at least 10 minutes then turn off all the burners except for one outer one. Regulate this burner until you achieve a cooking temperature of between 110°C to 130°C. Pre-oil Roasteasy by swirling in a small bowl with the cooking oil. Wrap ribs in the pre-oiled Roasteasy, making sure the top of the meat is fully covered.

Cook bone side down for 8-10 hours to an internal temperature of at least 90°C.

While the ribs are cooking, prepare the sauce. Combine the red onion, tomato sauce, bourbon, brown sugar, apple cider vinegar, Worchester sauce, soy sauce and Dijon mustard in a medium sauce pan. Bring to a boil and simmer for 10 minutes or until the sauce is thick. Glaze the ribs in the last 10 minutes of cooking by removing Roasteasy and brushing over the sauce. Let the ribs rest for 10-20 minutes before serving. Serve with any remaining sauce on the side.
