
Oven Roasted Vegetable Medley
Serves: 8
Ingredients
- 3 courgettes
- 2 orange kumara
- 2 red kumara
- 1/4 pumpkin
- 1 red onion
- 10 baby carrots
- 1 tablespoon olive oil
- 1 tablespoon Herbs de Provence (or seasoning of your choice)
- 1 teaspoon sea salt
- Handful of baby spinach leaves (if desired)
Method
Preheat oven to 180 °C
Cut the courgettes, kumara and pumpkin into medium chunks, onions into wedges, leave baby carrots whole.
Place vegetables into roasting dish (we like to use a Scanpan), drizzle with olive oil and sprinkle over Herbs de Provence and sea salt.
Pre-oil your Roasteasy and drape on top of the vegetables.
Roast for approximately 45minutes.
To serve, scatter baby spinach leaves on a serving platter and top with the roasted vegetable medley.
