Oven Roasted Herb Lamb Rack

Ingredients

1 frenched lamb rack

2 tsp chopped fresh thyme

1 tsp chopped fresh rosemary

2 cloves garlic, diced

Salt and pepper

2 tbsp olive oil

Method

Marinate the lamb rack by rubbing all over with the herbs and garlic. Sprinkle generously with salt and pepper and place in a plastic bag with olive oil.

Spread oil around so that it coats the lamb. Marinate in the refrigerator overnight or for 1 to 2 hours at room temperature.

Remove lamb rack from refrigerator 1 to 2 hours before you cook it to bring to room temperature. (Skip this step if you haven’t marinated it overnight)

Pre heat the oven to 220 degrees Celsius.

Pre oil the Roasteasy by putting it in a bowl with a generous dash of olive oil. Rub the oil around the Roasteasy until it is fully covered.

Score the fat on the lamb rack and place in a roasting pan fat side up. Cover the entire rack (including the bones) with the pre-oiled Roasteasy.

Place the lamb in the oven and roast for 15 minutes or until the surface of the roast is browned.

Next, lower the heat to 150 degrees Celsius and cook for a further 10-20 minutes depending on how rare or well done you want your lamb.

Remove from oven and leave covered with the Roasteasy to rest for a further 15 minutes.
