Crispy Pork Belly

Ingredients

Pork belly

1/2 cup sea salt

1 tbsp good quality cooking oil

Method

Pat the pork belly dry and then place, skin side down, on a bed of salt in a large container and refrigerate overnight.

Remove the belly from the salt and score the skin with a sharp knife.

Place the belly in a roasting dish/ directly onto your BBQ grille bars on top of a ball of foil. The foil should raise the centre of the belly so the fats will run off and not pool on the surface.

Cover with the pre-oiled Roasteasy and cook in an oven or BBQ running at 200°C.

Cook for 2 ½ hours to 3 hours depending on size and how you like your pork.

Rest the meat, while still covered with the Roasteasy, for at least 10 minutes.
