
Chipotle Spatchcock Chicken
Ingredients
Whole chicken
ΒΌ cup Chipotle sauce (or favourite hot sauce)
1 red onion
1 tablespoon olive oil
Salt and pepper
Method
Pre-heat the oven to 180-190 degrees Celsius.
Pre oil the Roasteasy by putting it in a bowl with a tablespoon of olive oil. Rub the oil around the Roasteasy until it is fully covered.
Cut out the backbone of the chicken, open it out and flatten. Spread the chipotle (or favourite hot sauce) generously over the chicken, ensuring it has an even coating all over it. Marinate chicken for 1hr in the fridge. Place chicken inside a roasting dish.
Cut the red onion into quarters and place around the base of the chicken. Season onion and chicken with salt and pepper.
Place the oiled Roasteasy over the chicken and roast for approximately 60-90mins depending on the size of your chicken.
Baste every 15mins, leaving the Roasteasy on while doing so.
