Beef/lamb roast of your choice

Water

2x roasting pans

2x rosemary sprigs (optional)

Method

To achieve that great BBQ flavour, it is best to cook your meat straight on the grills. We have found the following method excellent for keeping your roast moist while retaining juices for stock or gravy.

Choose a low roasting pan or foil dish that will sit on top of the flame tamers (this method only works with flame tamers) and still fit under the grilling racks. Find a smaller dish that will fit inside the larger one to trap any juices which run off the meat. Fill the outer dish with water so that the inner dish is floating level with the top of the outer. You can add rosemary springs to the water for enhanced flavour. Don’t be concerned if the water boils furiously when you initially heat up your BBQ as you can top up the water as required while the meat is cooking. In all our recipes we recommend turning off the middle burners just prior to putting the meat on the grill.
