
BBQ Beef Scotch Fillet
Ingredients
- 1 beef scotch fillet
- 1 tbsp mustard
- 1 garlic clove – crushed
- 1 tsp tomato sauce
- 1 tsp Worchester sauce
- Salt + pepper
- 1 tbsp good quality cooking oil
Method
Remove any traces of silver skin and fat from underside of beef. Leave a ribbon of fat running across the top. Season underside with the mustard, garlic, tomato sauce and Worchester sauce.
Half fill a shallow pan or tinfoil dish with water. Place the pan under the grill on top of the middle twin flame tamers. Preheat BBQ to 250°C, then turn off centre burners.
Season the topside of the beef with salt and pepper. Pre-oil your Roasteasy and drape over the topside beef, tucking the loose ends underneath. Place the beef on grill directly over the pan then cook for 20-30 minutes with two outer burners on high. Check and top up water in pan as required.
Turn the outer two burners down and cook for a further 45-60 minutes with a hood temperature of 180 – 200°C, or until your desired internal temperature is reached.
Remove beef from BBQ and allow to rest for 10-20 minutes, while still covered with the Roasteasy.
